Parmigiana is Italian that means cooked or served with Parmesan cheese.

3 to 4 lb. Russet or Idaho potatoes
1 quarter vegetable, canola or Corn oil
2 Tbsp. grated parmigiana reggiona cheese
1Tbsp Italian parsley finely chopped
1Tsp black truffle oil (optional)
1Tsp smoked paprika (optional)
1 Slice the potatoes, rince them, pat and dry them in kitchen tower
2-In a fry pan put the slices potatoes and pour over the oil.
3-Turn on the heat in medium high .The gradual heating ensure that the potatoes are thoroughly cooked before they get crispy
4- Stir occasionally, about 25 to 30 mn, the fries will be golden brown. Carefully remove fries from the oil and drain them on paper towels
Transfer them in serving plat, tossed them with seasoning, cover for 1 minutes and serve immediately.
