Mom's Potatoes Salad

This is my Mom’s potato salad.  We grew up on it. Not particularly low calories, but absolutely delicious.Love it.  


Serving Size: 10

Ingredients:
1/4 cup vinegar
1/4 cup sugar
1 1/2 egg yolks, beaten
mustard
cream
pimento
celery
onion
radishes
potatoes, cooked
eggs, Hard boiled

Directions:
1. Boil sugar and vinegar till sugar dissolves.  Beat egg yolks and add  pan liquid slowly too.  Put in pan and stir and heat slowly till thick.  Cool and add to taste mustard, cream, pimento, etc.  Should be tart.  Pour over salad.
Easy and Good!
