Recipe By: Betty Crocker
Serving Size: 4 to 6
2 lbs. potatoes, about 6 medium
1/4 cup onion, finely chopped
1 teaspoon salt
(I don't use with double Italian, dressing)
1/8 teaspoon pepper
1/4 cup Italian Salad Dressing,
(I double the amount)
1/2 cup Mayonnaise
(I use Hellman's), or salad dressing
2 eggs, hard cooked cut up
1/2 cup celery, chopped
1. Wash potatoes. Heat 1 inch salted water (1/2 t salt to 1 c water) to boiling. Add unpared potatoes. Cover tightly; heat to boiling and cook 30 to 35 minutes or until tender. Drain; cool and peel. Cut potatoes into cubes; combine in bowl with onion.
2. Sprinkle with salt and pepper; mix with Italian salad dressing. Cover; refrigerate at least 2 hours. Just before serving, add mayonnaise; toss until potatoes are well coated. Stir in celery and eggs. 4 to 6 servings.
3. From the Betty Crocker's cookbook I usually add double the amount of dressing. It will have more punch this way. I also use Hellman's Mayonnaise. I also remove from the water as soon as they are done and peel. I hear Chefs say that the potatoes absorb the flavor better if they are warm when dressing is added. This is a really good salad. We love it.
Easy and good.
