Potatoes Sautées

Serves 6-8

2 pounds of Yukon gold potatoes

1 onion

2 tbsp. tablespoon of olive oil

1 tbsp. herbs of Provence

1 tbsp. Paprika

Salt, pepper

1 -- Peel and wash the potatoes. Cut them into medium sized pieces.

2- Put the potatoes in a pan of boiling water and boil covered for 5 minutes

3- Drain the potatoes and cut them into medium cubes

4 -- Finely chop the onion after peeling.

5 -- Brush with olive oil a gratin dish and put the potatoes and onion.

6 -- Sprinkle with paprika and herbs, then salt and pepper. Mix gently.

7- Bake for 25 minutes at 375 degrees until the potatoes are golden and crispy
