Easy Potatoes Salad

Potatoes are an integral part of our daily dishes. Summer is also the perfect time for these easy recipes. Discover the potato like you've never seen before! Easy Potatoes Salad

1/4 cup onion, finely chopped 1 teaspoon salt

(I don't use with double Italian, dressing) 1/8 teaspoon pepper 1/4 cup Italian Salad Dressing,

(I double the amount) 1/2 cup Mayonnaise

(I use Hellman's), or salad dressing 2 eggs, hard cooked cut up 1/2 cup celery, chopped Directions: 1. Wash potatoes. Heat 1 inch salted water (1/2 t salt to 1 c water) to boiling. Add unpared potatoes. Cover tightly; heat to boiling and cook 30 to 35 minutes or until tender. Drain; cool and peel. Cut potatoes into cubes; combine in bowl with onion. 2. Sprinkle with salt and pepper; mix with Italian salad dressing. Cover; refrigerate at least 2 hours. Just before serving, add mayonnaise; toss until potatoes are well coated. Stir in celery and eggs. 4 to 6 servings. 3. From the Betty Crocker's cookbook I usually add double the amount of dressing.It will have more punch this way. I also use Hellman's Mayonnaise. I also remove from the water as soon as they are done and peel. I hear Chefs say that the potatoes absorb the flavor better if they are warm when dressing is added. This is a really good salad. We love it.
